It’s summer time and squash and zuchinni are coming out our ears once again. I love it! I’m one who likes to eat vegetables when I eat vegetables and sweets when I eat sweets, thus I can’t stomach the thought of putting zuchinni into bread or cookies. But I do very much enjoy experimenting with onions, garlic, cheese, and other things to make the zuchinni taste even more delicious. I love Italian food (and Mexican and American…my taste buds are of mixed ethnicity!) and so I decided to adapt a recipe I’d seen once. So here’s my very own Italian-Style Zuchinni recipe… I made it up this afternoon, and if I do say so myself, it’s
delicious!
Gret’s Italian-Style Zuchinni
Cut zuchinni/squash into six-inch long wedges
Place in glass baking dish, generously “greased” with olive oil
Sprinkle zuchnni with Basil, Oregano, Parsley, Salt, Pepper, Minced Garlic, etc.
Slice up an onion and place wedges on top of and between the zuchinni wedges
Sprinkle with parmesan cheese
Spread with jar of spaghetti/Italian sauce (or a couple cans of tomato paste and diced tomatoes–in which case, be extra generous with the seasonings)
Bake at 325 until zuchinni is fork tender
Sprinkle with mozarella cheese and cook until cheese is melted and golden
Variations could include adding sausage or chicken…or pasta to soak up some of the juice.

you don’t like zucchini bread?? i used to hate zucchini and always turned down my grandmother’s zucchini bread because i didn’t like the thought of eating something ‘sweet’ that had a vegetable in it. but one time she made a zucchini chocolate cake and didn’t tell me there was zucchini in it. i devoured it, and she told me it had zucchini in it immediately afterwards. ha ha
now i love zucchini bread
