The smell of home-made bread…

Microwaving flour causes it to smell like bread is baking. This was my fact for the day yesterday. I’d had my fresh-ground wheat flour in the freezer to keep it fresh, and forgot to get it out a day in advance of my bread baking. Thus, I was forced to put it off a day (and though man can’t live by bread alone, it is nice to have some in the house!) or find a way to get the flour a little closer to room temperature. Being the old-fashioned girl that I am, I just popped it in the microwave.

But you just can’t beat the smell of home-made bread, can you? As I was baking it yesterday, I wondered if y’all had any bread recipes you’d like to share. My favorite is below. Would you like to comment with your favorite bread recipe?

Oatmeal Bread
Mix and let sit:
1 cup oatmeal
1 1/3 cups boiling water

Mix and let proof:
1 cup warm water
2 Tbsp. yeast
1 Tbsp. honey

Combine with above:
2 eggs
1 Tbsp. salt
1/3 cup oil
1/2 cup honey
2 cups wheat flour
4+ cups white flour, enough to create a dough that cleans the bowl, but is still slightly sticky

Let rise in greased bowl for about 1 hour, or until doubled. Punch down, knead, and shape into loaves. Let loaves rise for about 30 minutes or until doubled. Bake at 350 for 30 to 40 minutes, or until well browned. Makes 2-3 loaves.

    Over the weekend I experimented with a new bread recipe I found on the outside of the Blue Chip Baker Dough Enhancer can. It worked great! Though we haven’t eaten any of it yet, it sure looks pretty…

    is the T. teaspoon or tablespoon? and about how much flour?

    I’m sorry, anonymous, I use T. as Tablespoon and t. as teaspoon without thinking others might not know what I meant. ;) The flour is variable, but I’d say six to eight cups…just enough so the dough cleans the bowl, but is still a bit sticky.
